A dark chocolate bar made from wild cocoa beans. This unique and rare wild Grand Cru chocolate Bolivia 68% comes from, as the name suggests, the Bolivian lowlands. The Chimane Indians leave everything completely to Mother Nature. This means that the cocoa trees are not pruned or fertilized, nature does its work. 
 
As soon as the large birds of prey fly just above the forest, almost against the tops of the cacao trees, the Chimane Indians sail their canoes to the islands where the cacao trees grow. There they collect the ripe cacao fruit and then take the cacao pods to designated gathering places. Here the cacao beans are fermented and dried in the sun. 

Flavor Profile 

This dark chocolate has a harmonious cocoa flavor with aromas that express the freshness of lemon and the fruitiness of grapefruit. The traditional processing method and the conching process of up to 60 hours(!) also bring out notes of plum and vanilla. Conching is one of the final steps in the chocolate production process where the cocoa butter is mixed evenly with the chocolate. As the chocolate is mixed airily for hours, the friction of the conching machine releases delicious aromas. 

Finally, the Grand Cru Bolivia 68% has a long finish. This combined with the fact that Swiss chocolate products Felchlin is the only one in the world to make chocolate from wild cocoa beans, makes this a unique culinary experience. A more exclusive chocolate cannot be found!
